Ingredients

  • ripe banana - ½
  • frozen raspberries - 1 cup (125g)
  • almond milk - 1 cup (240ml)
  • vanilla whey or pea protein - 2 tbsp.
  • smooth almond butter - 1 tbsp.
  • ice cubes - handful

Preparation Instructions

  • 1. Heat the coconut oil in a large pan.
  • 2. Season the chicken thighs with salt and pepper, then sear the chicken thighs until browned (about 5 minutes each side). Once browned transfer onto a plate and cover with tin foil.
  • 3. To the same pan, add the onion and garlic and sauté for 5 minutes. Next add in the mushrooms and cook for another 3 minutes.
  • 4. Add in the spices and season with salt and pepper to taste, return the chicken to the pan.
  • 5. Pour in the chicken stock and mix well. Next add in the coconut milk, reduce the heat and leave to simmer for 15 minutes.
  • 6. Taste for seasoning, sprinkle fresh parsley and serve.
