Ingredients

  • cashews - 1 cup (150g)
  • almonds - 1 cup (140g)
  • pecans - 1 cup (100g)
  • coconut oil - 4 tbsp.
  • coconut palm sugar - 2 tsp.
  • curry powder - 4 tbsp.
  • salt - ½ tsp.
  • cumin - 1 tsp.
  • cayenne pepper - to taste

Preparation Instructions

  • 1. Preheat oven to 300°F (150°C). Line a baking tray with baking paper.
  • 2. In a small saucepan, melt the oil with brown sugar, curry powder, salt, cumin and cayenne powder. Stir for a few minutes until the sugar has dissolved.
  • 3. Pour this mixture over nuts and stir well to coat. Spread the nuts out on the lined baking sheet and bake for 25 to 30 minutes until golden brown.
  • 4. Let it cool and store in an airtight container.
  • 5. This recipe makes around 14 oz. (400g) and the nutrition value is approximate for ½ oz. (15g).
