Ingredients

  • canned tuna in water - 11.2 oz. (320g)
  • red onion - 1 (small)
  • red chili pepper - 1
  • lime zest and juice - from 1 lime
  • ground coconut - ⅜ cup (25g)
  • baby Romaine lettuce - 1
  • mini pita breads - 4

Preparation Instructions

  • 1. Drain the tuna and transfer into a medium size bowl. Finely chop the onion, halve the chili, remove the seeds and chop finely, then add both onion and chili to the tuna.
  • 2. Next, add in the zest and juice of the lime and the coconut. Mix all the ingredients with a fork until you have a tuna salad with a nice texture.
  • 3. Prepare the lettuce leaves. Toast the pita bread. Cut them open as an envelope and fill them with lettuce and tuna salad. Or serve the tuna in lettuce wraps and the pita on the side.
