Ingredients

  • lentils - 1 ¾ cup (130g) (drained)
  • sun-dried tomatoes - 1 cup (70g) (drained)
  • artichoke - ½ cup (80g) (drained)
  • spinach - 1 cup (225g)
  • cucumber - ½ (chopped)
  • tahini - 2 tbsp.
  • apple cider vinegar - 2 tsp.
  • tamari or soy sauce - 1 tbsp.
  • honey - 1 tsp.

Preparation Instructions

  • 1. Prepare the vegetables and place them in a large bowl.
  • 2. Mix together the dressing ingredients (tahini, vinegar, tamari & honey), season with salt and pepper, and drizzle over the salad. Mix well, divide onto two plates and serve.
