Ingredients

  • onion - 1 (finely chopped)
  • garlic clove - 1 (chopped)
  • ginger - 1 tsp. (grated)
  • coconut oil - 1 tbsp.
  • Thai green curry paste - 2-3 tbsp.
  • lime - juice & zest of 1
  • light coconut milk - 14 oz. (400ml) can
  • bok choy - 1 large or 2 small (cut into small pieces)
  • lentils - 14 oz. (400g) can (drained & rinsed)
  • salt - to taste
  • coriander - to serve

Preparation Instructions

  • 1. Fry the onion, garlic and ginger in coconut oil for a few minutes then add the curry paste and cook for another 5 minutes.
  • 2. Next, add in the lime zest and juice, and the coconut milk, mixing well.
  • 3. Add in the lentils and bok choy and allow to simmer for about 5 minutes. Season with salt if needed.
  • 4. Serve with a portion of rice noodles and fresh coriander.
